Lasagne is a classic and this veganised version is delicious and as we'll see, delightfully nutritious.  In this article, we'll be using to quickly check out the nutritional content of this vegan lasagne recipe from BBC Food:

First we copy and paste the ingredients from the recipe and set the number of portions to 6 (as stated in the recipe):

Let's take a look at the macro-nutrients:

This looks great - there's plenty of protein in here and a healthy fat content.  We can click on the + next to Fat and see the Saturated Fat content is 2.9g, which is pretty low.

The calorie count might be a bit high for many (880 kcal per serving) so it might be better to split between 8 portions instead of 6, which would drop it to 660 kcal.

Let's move on to the vitamins:

This is great, we've exceeded the daily requirement for all but Vitamin D. That tends to be a troublesome one so we need to get plenty of sunshine!

Finally let's examine the mineral content:

This looks good as well with a decent amount of most of the trace minerals.  Remember that the RDA for sodium is a maximum so it's ok to be a bit low on that one.

In summary, BBC Food's vegan lasagne recipe is a nutritious vegan recipe.  We could have tinkered with it a bit but it wasn't necessary to make any modifications to improve its nutritional balance.
